Apple Cinnamon Oat Bran Muffins

Apple cinnamon oat bran muffins, baking, healthy snacks
I make these delicious, healthy muffins in enormous batches and freeze about half of them. We have them with breakfast, as after-school snacks, as extra treats in the boys' school lunches, and I pop a few in my purse whenever we're going to be out for a few hours.

1 1/2 cups whole wheat flour
1/2 cup oats
1/2 cup bran
3 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup white sugar
1/4 cup vegetable oil
1 egg
1 cup milk
1 cup apples


1. Preheat oven to 400F.
2. Mix all wet ingredients together in large bowl.
3. Add oats and bran, mix.
4. Mix dry ingredients together and add to wet ingredients. Mix.
5. Add apples, finely chopped.
6. Pour batter into paper lined muffin pan cups to 3/4 full.
7. Bake for 25 minutes at 400F. Remove muffins from pan immediately and cool on rack.

Any dried fruits, raisins, seeds or nuts are a tasty addition or substitution - but don't forget to keep it nut-free if you're going to send these to school with your little ones.
